Unlike a cooperative winery, Autoctona offers an exclusive, dedicated service with full control over the process and meticulous attention to each wine. It is possible to carry out different types of winemaking, tailored to the characteristics of the grapes and the producer’s goals. Each process is planned in accordance with technical and stylistic requirements, ensuring a consistent and controlled approach at every stage.

The use of containers depends on the stage of the process. For all activities carried out in stainless steel tanks—winemaking, stainless steel aging, and pre-bottling phases—Autoctona uses exclusively its own equipment. For aging in wood, the client provides the containers, while Autoctona manages their use and monitoring.

Autoctona directly manages all regulatory requirements related to winemaking through a dedicated internal office. The service includes maintaining winery registers, supporting harvest declarations, and handling certification requests, ensuring full compliance with current regulations.

Autoctona uses modern, highly specialized equipment, including destemmers-crushers with MOG selection, pneumatic bladder presses, peristaltic pumps, flotation systems, and temperature control systems for precise regulation of tank temperatures.

Yes, Autoctona is equipped to handle grapes with specific certifications such as Organic, VeganOK, NOP, and Equalitas, in compliance with the relevant regulations and procedures. We are also available to consider additional certifications upon the client’s request.

No, Autoctona does not provide winemaking consultancy. The service is focused exclusively on the technical and operational execution of the processes, leaving stylistic decisions to the client or their trusted consultants.

Yes, Autoctona provides logistical support during the harvest, including transport and containers, coordinating timing and operational procedures to ensure an orderly and efficient management.

Autoctona has an in-house laboratory for production analyses at key stages. For official testing, it relies on accredited external laboratories and, upon request, can send samples to the client’s preferred laboratory.

Autoctona is authorized to vinify a variety of IGT, DOC, and DOCG denominations, including IGT Toscana, Chianti, Chianti Rufina, and Chianti Classico, in full compliance with regulations and traceability procedures.

Grape collection is carried out according to a shared schedule, planned to act at the optimal ripeness, ensuring speed and operational precision.

Autoctona does not sell bottling materials. Clients choose their own suppliers, and Autoctona coordinates timing and logistics; only for specific services such as tirage and disgorgement are materials available for small batches.

Autoctona does not sell enological products, but provides a limited selection for certain production phases. The products used are tracked and billed according to actual consumption.

For safety reasons, clients cannot actively participate in winery operations, but they may be present by prior arrangement, in compliance with operational procedures.

Tastings are organized in a structured manner and scheduled together with the client and their technical representatives. Additional tastings can be arranged, and the tasting rooms can also be used for meetings with commercial clients and industry professionals.
